Soup for the Sickies

We got home from Oregon the other night and I was all sorts of fiesty, modeling my new silk pajamas.

I received 2 pairs at Christmas from my mom and my SIL N and I LOVE THEM – they’re so soft and comfortable and grandma-ish.  My brother said all I need is a smoking jacket and Hugh Hefner to complete the look.

Anyways, fantastic modeling aside, I woke up yesterday feeling like crap.  I mentioned it on Facebook, but I caught the cold/flu that my husband has.  sickface to the maximum.

I think it’s a cold with a 12 hour flu because I had body aches, freezing/dying of heat thing, no appetite, general misery yesterday, but I woke up feeling a lot better today.

I still have a cough, but otherwise I feel relatively decent.  I went on an very easy run, went to church and then did the unthinkable: I cooked.  Bravery has a name and it’s SR.

My husband’s favorite soup is Olive Garden’s Pasta e Fagioli which explains why after I was gone for 10 days, I returned to find an enormous collection of Olive Garden salad dressing and crouton packets in the fridge.

I found a copycat recipe online from Top Secret Recipes that is supposedly the best and closest to Olive Garden.  (If you Google, you can find a ton of similar recipes.)

Just kidding, there aren’t pickles in the recipe.  I just put those in the picture because I wanted to eat some.

The recipe calls for oregano, basil and some other spices that I already forgot about.  You can buy them ground (more $$), but I bought leaves (less $$).  Then, if you grind them up in your little mortar and pestle, you will feel super fancy and gourmet and then you’ll end up calling Williams & Sonoma to brag.  I know I sure did.

You’re supposed to use ditali pasta, but once again, I didn’t know what the heck that was so I did a Google image search and it looks similar to salad macaroni.  good enough for me. 

By the way, did anyone have a fruit/cool whip/macaroni pasta salad as a child or did I just make that up?  I sorta remember some weird pasta salad that was sweet?!

It took an hour to simmer, but it wasn’t hard to make at all. 

As I was eating it, I was trying to think if it tasted exactly like Olive Garden and I realized – I’ve never had their Fagioli soup!  I always order the minestrone.  err duh.

The sick hus is still in bed and hasn’t eaten today so I hope when he tries it, he’ll love it so much he’ll think he’s at the restaurant.

Yes, to the question regarding a fruity sweet pasta salad. Frog eye salad is what my gramma used to make, not sure if it is the one you had.

I hope your husband is feeling better! The soup looks delicious by the way :)

But YES, I totally do have weird, blurry childhood memories of a sweet, somewhat creamy pasta salad. I think it was some version of an ambrosia salad. It doesn’t sound too appealing now, but I guess someone must have liked it because it was definitely there……

Bummer that you weren’t feeling good and that your husband is sick too. My husband has also been sick for a few days, but is finally starting to feel a little better. Hope you all feel better soon!!

We have ALL been sick for like a week…even the toddler which blows even more than the adults being sick. You soup looks so good though, I may have to try and make it myself. Hope you guys feel better soon. I am feeling better so I am trying the “rum and diet coke to kill the germs” approach to my sickness..maybe that will work :)

Awww..sorry to hear you and the hubby are under the weather. I think it’s super sweet you made his favorite soup! I might have to try that out for ourselves, since it’s actually cold enough to eat soup in PHX right now!

ugh, i get an unholy amount of rage anytime i’m sick. lezzbehonest it’s because it makes me miss my runs and such. i’m glad u didn’t get laid up barfing for too many days though…i hope u kick the rest of the cold soon though!
i hope the hus gets better soon too cuz sick men can be really big babies even if they have a slight sniffle…so nice u made him his fav soup. :)

Ughh, the flu is definitely going around. I just came down with it despite getting the flu shot. I passed out and couldn’t stop shaking for 30 minutes, I kid you not. Glad you feel better and hoping I, our husband, and everyone else sick with it recovers quickly, too!

Speedy recovery guys. Perhaps give Manuka honey a go. Also, my mom makes us take porridge (rice, broth, chicken/pork bones, some veg cooked overnight in the crockpot) when we’re ill.

My husband’s family still eats that gross salad every Thanksgiving! Even when I host the hubs and his sisters insist that my MIL bring it. Sorry, but I say yuck.

OK, maybe I should not post a comment since I am not a fan of Olive Garden, however I think you should give you hubby a real Italian version of pasta e fagioli, you will see he’ll never go back to the OG version. :) . Happy New Year!

Ugh…we’re fighting that here in Chi-town…it’s wielded 1 case of won’t die pneumonia in one babe, a 15 mile run week for mama, and one potential case of bronchitis in another babe.

Hope you’re both feeling better soon. I swear by a hot curry. Does the trick. Or at least deadens the tatse buds for a while so you forget you have a cold/sore throat!! :)

Sorry you had the nasty flu – glad it seemed to be fairly short-lived. Hope your husband is well soon – I would rather be sick myself than have my husband sick!!!

My hubs LOVES pasta fagioli soup! I will have to make this for him, just to be nice and not because he’s sick. I hate it when he gets sick. I hope your hubs is less of a whiner than mine is!

My Grandma makes this great fruit pasta salad with acini de pepe, cool whip and mandarin oranges. So yummy!

It doesn’t look disgusting at all. It looks like soup! You know, when you figure in the cost of the fancy mortar and pestle and your hourly wage for the time it took to grind the leaves into smaller pieces, suddenly the more expensive, already-ground spices don’t look all that much more expensive. But then you’d miss out on the zen calming of the grinding experience.
