The Rich People’s Salad

by SkinnyRunner on June 24, 2011

Go check out my guest post on PBF.  It’s a little less dumb than normal.  I’m not saying you’ll actually learn anything, heck no; it’s just a little light on the dumb today.  My apologies.

Did you guys dig Lesley’s salad post or what?  Lots of good info in it.  When I got home from my long run this morning, I wanted a salad, but I always want salad after running.  It’s my one food saving grace.

“Give me salad or I’ll go tanorexic on you.”

We were in Vegas and had laid out by the pool all day so I was a lovely shade of lobster.  Is that a good enough excuse??

Today’s salad is called The Rich People’s Salad because it had smoked salmon in it… and smoked salmon ain’t cheap, even at Costco.  But it’s so good and good for you.

I was going to call this The Old Rich White Man Salad because I picture an old dude in a smoking jacket at a yacht club nibbling on his cigar while eating caviar and smoked salmon on a Baccarat crystal platter, but then I’d get a bunch of hate mail about how I’m not only dumb but also racist.  and socio-economic-ist.

Anyways, this is probably one of my weirder combinations, but I like to have the smoked salmon with apple.  I don’t even know why, maybe the crunchy apple with the softness of the fish.

Add some homemade canned beets, red pepper, pickles of course, and feta cheese.  Boom, I’m on the edge of glory.

Then you top it with some Trader Joe’s Greek Style Feta Dressing, a perfect pairing for my bottle of Louis XIII Black Pearl and my Cuban.  Excuse me while I go check on my mini giraffe…

I actually know the guy in the “Opulence: I has it” picture… he’s actually jameson-drinking flirty Irishman named Tim who I once worked with on a film.

I think he’d like your salad even though he’s not as rich as he appears on tv. :)

I think your salad just asked me if these are payless shoes and then rolled it’s eyes.

I love salmon, but can’t get on board with smoke salmon for some reason. I continuously buy it though in hopes that my taste will change!

I have smoked salmon in my fridge and I was planning on making a salad for dinner… Thanks for the inspiration. Also, it took me three tries to type salmon. I kept typing slamon. Slammin salmon.

Is the package of salmon bigger than Marni? I think we need a side by side comparison.

I just had to comment about the Louis XIII and ridiculous alcohol. There’s a bottle of scotch in Harrod’s that’s 120,000 pounds. I wish I had that much money lying around to buy scotch. Or, you know, a house…

I don’t like seafood. I so badly WANT to like fish because it is so good for you. Any tips for turning myself into a seafood lover?

Oh muy goodness! I love the mini giraffe. I gotta get me one of those….and, you know, some opulence. Maybe that would help, no? And thanks for not going tanorexic…No oompa lumpas here, please.

This looks like a much healthier way of eating smoked salmon than how we do it up in NYC… Lox and schmear on a bagel is how I’ve always enjoyed it but I guess I could try it this way- might miss that fluffy New York bagel goodness though!

Smoked salmon on salad with feta and apples…yum! The addition of pickles and the other things is a little different, but I’m not hating on it. Now I’m going to have to find some smoked salmon for my dinner salad later!

This has nothing to do with your salad (although I am forever indebted to you for teaching me about pickles on salads – who knew?!) …. the other night my 12 year old son was on the computer and I asked him if I could kick him off for a minute to check my email. His reply “sure Mom, but you’re not going to start looking at Skinny Runner, right – that will take too long.”

Your salad sounds delish. I thought when you smoke something it makes it not so healthy. Please, please, please tell me I am wrong…

no my parents have smoked their own fish for a long time. its kinda like baking it but not. youre not adding anything to the food except heat.
